Basic Potato salad mix Use this mix as the basis for the following recipes. 3 potatoes (each about 3 inches in length and 3 inches in diameter, to^yield about 3 cups cubes) 1 small Vrtalia or red onion (chopped, about 13 cupI 1 tablespoon white vinegar or lemon juice (bottled is OK) Scrub potatoes. Peel (or not). Put onto a heat-sa'e plate. Microwave until soft (10-20 minutes according to size). Cool. Cut into random 1/2-inch cubes. Usmg a rubber or plastic spatula, fold in onion and vinegar or lemon juice.

Com and Olive Potato Salad Serves 4-6 1 recipe basic potato salad mix 2 cups fresh com (raw and cut from the cob. about 3 earsl 1 (14-16 ounce) can chick peas (garbanzo beans), drained and nnsed 2 tablespoons fresh parsley leaves ichoppedI 1/4 cup coarsely chopped green or black pitted olives (drained) 1/4 cup rice vinegar OR 1 4 cup lemon juice OR 34 cup ranch dressing Garnish: tortilla chips Fold everything (except garnish) together using a rubber or plastic spatula. Chill. At serving time, top with a generous handful of lightly crushed tortilla chips. Karla's tips: 1 (15-16 ounce) can corn (drained) OR 2 cups frozen corn (thawed, rinsed, and drained but not cooked) can be used in place of fresh corn, but fresh com is better. A handful of crumbled, cooked bacon would be a great garnish, too
