2 tablespoons butter (melted) or vegetable oil (not olive)

Pinch nutmeg

Position oven rack so mixture will roast in center. Preheat oven to 350 degrees. Lightly coat pan with baking spray.

Toss all ingredients together. Spread in a single layer on pan. Roast about 30 minutes, stirring occasionally, until vegetables are tender and have caramelized (browned lightly) and most of the liquid has evaporated.
