About 3 eggs, 4 ounces of American cheese, 3/4 cup of cottage cheese, 1 1/2 cups of canned beans, or 5 tablespoons of peanut butter will provide onethird of a day’s protein. Dry beans and peas, which represent a real protein bargain because of their low cost, provide protein of lower quality than animal products and should be used in combination with a small amount of meat to best satisfy nutritional needs. Jellied Pecan Apple Pie
1 recipe for a 9-inch pie shell 2 tablespoons finely chopped
semi-sweet chocolate bits 1 envelope unflavored gelatin 2 tablespoons sugar 1/4 teaspoon salt 2 1/2 cups apple sauce 1/4 teaspoon cinnamon 1/8 teaspoon nutmeg 1 teaspoon lemon juice 3 tablespoons chopped pecans, toasted 8 pecan halves, toasted 1/2 cup heavy cream, whipped Make pastry according to directions and stir in chocolate bits. Roll and fit into pie pan. Bake and cool. In a small sauce-pan, mix gelatin, sugar, and salt. Add 1/2 cup apple sauce. Place over low heat, stirring constantly until gelatin is dissolved. Remove from heat, and add remaining 2 cups apple sauce, cinnamon, nutmeg, lemon Juice, and chopped pecans. Let cool to the consistency of unbeaten egg white. Pour into baked pie shell. Arrange pecan halves on top of filling. Just before serving time arrange whipped cream around edge of pie.
