Homemade Biscuit Mix
About 9 cups Mix 8 cups sifted enriched 1 cup all-purpose, self-rising flour shortening (2 lb. bag) Measure flour into large mixing bowl. Cut in shortening on low speed of electric mixer or with pastry blender, until mixture resembles coarse crumbs. Store in covered container at room temperature. (Mix will keep 1 to (i months.) To use f Mix, spoon lightly into dry measuring cup and level off with spatula.
Homemade Biscuit Mix Biscuits Measure 2 cups Mix into mixing bowl. Blend in enough milk ( 1to clip ) to make a soft dough. Turn out onto lightly floured board or pastry cloth and knead gently 20 seconds. Roll out 1 '■>inch thick. Cut out biscuits with floured 2-inch biscuit cutter or sharp knife. Place on ungreased baking sheet. Bake in preheated 450° oven 10 to 12 minutes, or until lightly browned. •o
