Position oven rack in center of oven. Preheat to 400 degrees. Grease a standard 12 cup muffin pan or line with papers. Whisk together in a large bowl: 2 cups all purpose (lour 1 1/2 teaspoons poppy seeds 1 tablespoon baking powder 1/2 teaspoon salt Whisk together in another bowl: 2 large eggs 1 cup milk or cream 1/2 cup white sugar or light brown sugar (packed) 1/4 cup to 1/2 cup melted butter (according to how rich you want your muffins - that's 1/2 stick to 1 stick or use 1/4 cup to 1/3 cup vegetable oil) 1 tayespoon grated lemon peel 1 tablespoon vanilla Add to the flour mixture and mix together with a few light strokes just until dry ingredients are moistened. Do not over mix. The batter should not be smooth. Divide the batter among the muffin cups. Bake until a tooth pick inserted in 1 or 2 muffins comes out clean - about 17 minutes. Cool 2 to 3 minutes before removing from pan. Serve hot or finish cooling on rack.
