The important point to remember about deep fat frying is to keep the temperature at c"en and correct heat. When comparatively cold food is dropped into the fat., it tends to cool off th,_> fat slightly. Therefore a deep fat thermometer is helpful. Correct temperature will help overcome the wasting of food and fat. Fat that gets top hot can’t be used more than once or twice . . . but if heated to the right point it can be strained and stored in a cool place to be used many times.
