The carcass must have two square inches of loin eye per 100 pounds of weight. The base weight is 450 to 500 pounds and heavier carcasses are adjusted upwards. As carcasses get larger, says Mast, there is a tendency for the loin eye area per 100 pounds to diminish slightly. Standards are also set up for the amdunt of fat and marbling desired on top quality carcasses.
