SWEET POTATO PIE
Slice sweet potatoes lengthwise in half, then crosswise in 1/8-inch slices. Combine brown sugar, cinamon, nutmeg and ginger. In pan alternate layers of sweet potatoes and brown sugar. Dot with butter or margarine; set aside. Roll paltry to circle 1/8-inch thick; cut into 3/4-inch strips. Reserve 3 trips for border. Crisscross remaining 1 strips over filing to form lattice top. For decorative edge, I press reserved strips of pastry to rim of pan to form continuous edge. Bake 10 to 12 minutes at 450 degrees.
