Combine 1 cup enriched self-rising corn meal, 1 cup sifted enriched self-rising flour, 1 cup chopped nuts and cup sugar in mixing bowl. Blend together eggs, 1 cup mashed ripe bananas and i/3 cup melted shortening or oil. Add all at once to corn meal mixture, stirring until well blended. Turn into greased 4x/> x 8',2-inch loaf pan. Bake in preheated 350° oven 50 to 60 minutes, or until cake tester inserted in center comes out clean. Cool in pan on wire rack 10 minutes before removing. Cool completely before slicing.
