gelatin into rinsed but not dried 5 cup ring mold. Chill about 1 hour or until slightly thickened.
Arrange grapes on gelatin. Chill until set. Add remaining gelatin mixture; chill until just slightly thickened. Gently push plums through gelatin around side of mold. Chill 3 hours or until firm. Unmold on moistened serving platter. Fill center with whipped cream; garnish with grape clusters and mint sprigs.
