Tip: Substitute 1 pound bulk Italian sausage for the ground beef. Salsa Muffins 12 muffins Start to finish: about 30 minutes. Heat oven to 400 degrees. Line 12 medium cups with paper baking cups, or greased bottoms only. Beat with spoon in medium bowl: 1 cup salsa 1/3 cup vegetable oil 1/4 cup skim milk legg Stir in just until flour is moistened (batter will be lumpy): 2 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt Spoon batter into muffin cups. Bake 18 to 20 minutes or until golden brown. Immediately remove from cups. If using self-rising flourv omit baking powder and salt:" High Altitude Directions: No changes needed.
