Orange Butterscotchies About 2 dozen cookies '/ cup shortening \/i cups firmly-packed light brown sugar 2 eggs 1 teaspoon vanilla extract V/ cups sifted enriched self-rising flour / cup chopped nuts 2 tablespoons butter or margarine, softened }'/ cups confectioners sugar / teaspoon grated orange rind 2 tablespoons orange juice Melt shortening in medium-sized saucepan. Blend in brown sugar. Remove from heat and cool. Thoroughly mix in eggs and vanilla. Combine flour and nuts. Stir into egg mixture, blending well. Spread in greased 9 x 13 x 2-inch baking pan. Bake in preheated 350° oven 20 to 25 minutes, or until golden brown. Remove pan to wire rack and cool. While cookies are cooling, cream butter or margarine. Add sugar, orange rind and orange juice and mix until light and Huffy. Frost cookies with orange icing. Cut into bars. Remove cookies to wire rack and cool.
