It is often thought that eating vegetables raw guarantees getting the most nutrients but this is not always the case. Vitamin C is destructible by heat so some raw source of vitamin C should be eaten every day. But cooking vegetables breaks down the cellulose structure and makes other vitamins more accessible than they would be otherwise.
