Black Bean Soup Prepare as above, adding enough liquid to two cups black beans to make 10 cups and cooking with a turkey carcass, a ham bone, or a piece of salt pork until tender (about 2‘/j-3 hours). Add and simmer, covered, 30 minutes longer until tender: Vi cup chopped onions, 1 cup chopped celery with leaves, 'A cup chopped carrots, 1 clove garlic, 1 bay leaf, 1 teaspoon sugar, a dash of cayenne or a pod of red pepper, and a pinch of thyme.
Remove bones or meat. Strain, chill, remove fat. Melt 3 tablespoons of butter, stir in 2 tablespoons of flour, blend, and add a little of the soup mixture. Bring to a simmer while reheating the rest of the soup. Pour the butter-flour-soup mixture into the larger pot. Soybeans
Although all soybeans are edible, some are "more edible" than others. They are grown like any other bean and require a long growing season. But they are hard to shell. Immerse them in boiling water for ten minutes to make shelling easier. For an informal family meal, diners can shell their own beans as they eat them.
