The Virginia Cowbelles are Virginia women organized to encourage the purchase and serving of locally-grown beef. Many of them, like Toni Updike of Washington, are married to beef growers or have some other connection with the cattle-raising industry. Earlier this spring, the Virginia ■ Cowbelles sponsored the Virginia Beef Cook-Off held at James Madison University. Toni attended the Cook-off and tasted the winning dishes.
All of these call for ground beef in unique combination with other ingredients. They were judged on taste and ease of preparation.
