On this morning, August 8, a cloud seems to have settled softly on the earth. The light is diffused and Chicory blooms glow in roadsides. The flowers are of a curious shade of blue; it is hard to describe. New flowers open each morning and are at their best in filtered light; strong sun makes them close on themselves and disappear. At the end of each day they are gone and remain only as faded remnants. Bright new flowers will open tomorrow.
It’s the root of Chicory that is prized my many as a flavoring for coffee. These stout roots are ground and roasted and added to coffee beans. I have several Louisiana friends who think coffee is not coffee without the addition of Chicory.
