Carrots are an excellent source of Vitamin A which is needed for normal growth and normal vision in dim light. It also helps maintain the skin and the inner linings of the body. You can also get Vitamin A from liver, eggs, butter, margarine, whole milk, cheese, dark-green and deep-yellow vegetables and some deep yellow fruits.
This recipe for carrots from a Rappahannock resident has become a favorite for even those who said they didn’t like cooked carrots.
Company Carrots
l’/j lbs. carrots (may be less)
'A cup mayonnaise
2 tablespoons chopped onion
2 tablespoons horseradish
‘/«teaspoon salt
dash pepper
’/« cup crushed saltines
2 tablespoons margarine, melted /Paprika and parsley flakes
Cook carrots until done and drain. Place in casserole. Combine mayonnaise, salt, pepper, onion and horseradish. ((You may add oneor two tablespoons evaporated milk to above mixture). Spoon over carrots. Mix crumbs and margarine. Spread on top of casserole. Sprinkle parsley flakes and paprika and bake at 375 degrees for 20 minutes or a bit longer until bubbly.
