Now is the time for pickling vegetables, making relishes and searching for favorite local recipes for preserving vegetables with vinegar, salt, or a vinegarsugar mixture. As Rappahannock cooks prove, almost any vegetable or fruit can be made into a pickle.
Folklore has it that the Chinese invented pickling centuries ago: the Chinese laborers who worked on the Great Wall of China carried salted vegetables with them to their work. In this country pickling has been an important feature of Pennsylvania Dutch cooking—in fact, the traditional Pennsylvania Dutch meal is supposed to contain “seven sweets and seven sours”.
Pickling is not difficult, but if you've never done it before there are some guidelines:
