7-Day Cucumber Pickle

10 medium cucumbers

8 cups sugar

2 tbs. mixed pickling spices

5 tsp. salt

4 cups vinegar

Put cucumbers in kettle and cover with boiling water. Let stand over night. Next morning, drain and repeat for three days. On the fifth day drain and cut into desired size. Combine sugar, salt, spices and vinegar and bring to a boil. Pour over cucumbers and let stand for two days. On the third day bring to a boil and put in hot sterilized jars and seal.

To pickle beets: mix beets that have been cooked, peeled, and sliced with leftover vinegar and spices. Add more vinegar and sugar if necessary to cover. Bring to boil and simmer fifteen minutes. Pack beets in sterilized jars, pour boiling brine over beets, seal and process for ten minutes.
