The following are a couple of recipes I would like to share with you.
Dark Delicious Apple Cake
5 cups finely chopped, peeled apples 2 cups sugar 2 eggs 1/2 cup soybean oil 2 teaspoons vanilla 2 cups flour 2 teaspoons baking soda 2 teaspoons cinnamon 1 teaspoon salt 1 cup chopped pecans Place apples in a bowl and toss with sugar. In a large mixing bowl beat eggs, oil and vanilla. In a small mixing bowl stir together flour, baking soda, cinnamon and salt. Add flour mixture alternately with apples to egg/oil mixture. Beat until mixed. Stir in nuts. Pour into a greased and floured tube pan. Bake at 350 degrees until tests done, about 1 hour and 15 minutes. Cool in pan 15 minutes.
Date Nut Bars
1 cup soybean oil margarine 2 cups confectioners sugar 4 eggs 2 cups flour 1 lb. pitted dates, chopped 2 cups chopped nuts Cream margarine and sugar. Add beaten eggs one at a time. Add one cup of flour to mixture. Mix remaining cup of flour with dates and nuts. Add to mixture. Grease and flour a 9 x 13 x 2inch pan and pour mixture into pan. Bake at 350 degrees for 60 minutes. Cut and dip in confectioners sugar. Makes 2 to 3 dozen.
