Brown chicken in oil in large, heavy skillet. More oil may be added if needed. Pour off fat. Add water. Cover and Simmer over low heat 30 minutes or until tender. Remove chicken to warm serving platter. Pour off drippings, reserving 2 tablespoons. Return these 2 tablespoons of drippings to skillet. Add reserved seasoned flour mixture. Blend well. Add orange juice, brown sugar, ginger and cinnamon. Cook, stirring constantly until thickened. Serve chicken topped with orange sauce and pecans. Marinated Brussels Sprouts 4 cups whole or halved brussels sprouts 2 tablespoons tarragon vinegar 6 tablespoons vegetable oil 1 heaping tablespoon minced fresh dill 1 heaping tablespoon minced fresh chives 1 tablespoon lemon juice Pepper Steam the brussels sprouts for 35 minutes, until bright green and just tender crisp. Plunge into cold water to stop the cooking. Drain. Mix the remaining ingredients and pour the mixture over the brussels sprouts. Marinate the sprouts at least 6-8 hours. Orange/Gingered Beets 2 tablespoons melted com oil margarine 6 cups diced cooked beets 1 cup orange juice 2 teaspoon fresh ginger, minced Combine beets and margarine in skillet. Combine orange juice and ginger. Pour over beets. Cook only until heated thoroughly. Apple Crisp 4 cups tart apples, pared, sliced 1/4 cup water 1 tablespoon lemon juice Brown sugar substitute to equal 1/4 cup brown sugar 1/4 cup whole wheat flour 1/4 cup.old-fashioned rolled oats 1/2 teaspoon ground cinnamon 1/4 teaspoop ground nutmeg 3 tablespoohs margarine. 1. Place apples in 8 x 8 x 2-inch baking pan. 2. Mix water and lemon juice, pour over apples. 3. Mix sugar, flour, oats and spices. 4. Add margarine to dry mixture, mix until crumbly. 5. Sprinkle crumbly mixture evenly over apples. 6. Bake at 350 degrees F. (moderate oven) until apples are tender and topping is lightly browned, about 40 minutes.
