until very creamy and light. Mix in warm cream very slowly and carefully. Return to cream pan and cook over low heat until mixture coats the back of a spoon. Strain into a shallow 2-inch baking dish and let it set up in refrigerator overnight or at least 8 hours. About 2 hours before serving, cover top of the custard with remaining cup of sugar, spreading it out evenly. Place dish under the broiler and let it remain there until sugar caramelizes. Remove and let the dish cool, and refrigerate until serving,
