Food Safety Considerations When you marinate, you are dealing with raw meat, poultry and fish, •vhich normally contain some bacteria. Therefore you need to remember ihese simple food safety precautions. • Always refrigerate food as they marinate. • Never use a metallic bowl to mix marinades. Acids in marinades may react with the metal. You can also use a plastic Ziploc bag for marinating food. • Boil reserve marinade before you use it as a basting or dipping sauce (or make additional marinade to use only as a sauce). Harmful bacteria can survive jn marinades that have come in contact with raw meats, poultry or fish. Time Saver In a hurry?
