Duvall puts on music — something lyrical but peppy, like Frank Sinatra — and tells people to pair off and practice.

It is obvious that people are enjoying themselves. Some couples swirl around the room in an impressive display of skill. Others hum with the music or grin at their partners. The less practiced can be heard counting softly as they step in time — slow, slow, quick-quick or back, back, side-side.

Or, as one gentleman likes to count they rhythm, “Blah, blah, blah-blah.”

“Switch partners!” Ms. Duvall calls as the song comes to an end. This is usually a signal to break into conversation.
