The seeds for the original seedless types were very expensive and germinated rather poorly. Some of the newer seedless hybrids are less costly and germinate much better. The quality has been improved and these may become quite important for home garden or commercial production.
A serious problem in growing watermelons is determining when they are mature. Changes in size and color do not indicate ripeness. They are usually ready to harvest when the spot where they contact the ground changes from white to pale yellow. At maturity the tendrils become dry and brown, and the melon has a dull tone when thumped.
Watermelons are used primarily as a dessert food, in a fresh, chilled condition. They are not an important source of nutrients, but do supply useful amounts of vitamin A.
As the name suggests, watermelons contain a high percentage of water. Actually their 92 percent is less than several other vegetables such as asparagus with 93, celery 94, lettuce 95 and cucumber 96.
