Sugar Snap Saute
Blanch trimmed peas for a minute or two. Drain and pat dry. Saute gently, without browning, in unsalted butter. Season with a little crumbled dried savory, thyme, or chopped fresh parsley.
Sugar Snap Stir-Fry Tossed peas in a spoonful of vegetable oil in a hot wok. Add soy sauce, pineapple juice and a little toasted sesame oil. Cover and cook briefly until done.
Sugar Snap Salad Blanch and drain trimmed peas. Toss with cut up red pepper and cubed cooked artichoke hearts. Dress salad with vinegar, oil and mustard.
Vegetable Spaghetti
This worthwhile summer squash was introduced about the same time as the Sugar Snap but because of its spectacular billing, it was taken less than seriously by most gardeners. Vegetable spaghetti is planted when the last frost is past, picked whenever green or yellow (for a riper, nut-like flavor) and cooked like this:
