A good frozen food deserves a good package. No matter how good the food is when we freeze it, if the package is of low quality the food soon 'will lose quality.
The chief requirement of a good package is that it be made of a moisture-vapor-resistant material. This means more than just being able to hold water. The package must also keep in the water vapor, and keep out the oxygen. Tin cans and glass jars would seem best from this respect, but various other materials will give satisfactory service.
There are many suitable packages on the market today. Your locker operator sells several types. Heavily waxed cartons with tight covers are satisfactory. Some have a plastic cover which gives a good aeal. These are suitable, particularly for fruitB which are packed in syrup. ‘ For fmits without syrup and for vegetables, a package consisting of one of the plastic liners protected by a cardboard box is even better. Some types of cellophane, pliofilm nad other plastics have been treated to make them moisture-vapor-resistant, and can be heat-sealed also. These films have been laminated to heavy pai>er to give them strength.
The shape of the package should also be considered. Round packages waste locker space, so the trend is toward rectangular packages. A thin rectangular package permits more rapid freezing than a cube. It also thaws quicker when it is to be used.
Some of the packages can be (washed, and re-used. This cuts the packaging cost without cutting the quality of the package.
If we package properly, we can go a long way toward keeping our frozen foods garden-fresh. A poor package is bound to cause loss"" of quality and vitamins.
