Raspberry Cream
Chill in icebox or freezer 1 cup raspberries. Whip and set on ice or in freezer 2 cups heavy cream. In second bowl whip until stiff 4 egg whites. Slowly add Vi cup powdered sugar. When glossy slowly fold in 1 tablespoon cream sherry, the raspberries and the whipped cream. Pour into custard cups and chill or serve immediately. A sprinkle of chopped nuts or slivered almonds may be added.
To Smoke a Ham
After hams have completed time in salt cure and have been washed and allowed to dry, they should be hung from two to four days in a thin gauze of smoke at 90 degrees. Put your hand in the smoke; it should feel just warm. When a rich brown glaze covers the meat, hams may be taken from the smoker, hung to cool for several days and wrapped in two layers of paper, a cloth sack, and lastly, secured in brown paper bags. Age as desired.
