peanuts and 1 teaspoon vanilla. Spoon chocolate mixture over peanut butter layer; cool and cut into squares. Yield: 3-1/4 pounds.

Peanut Haystacks

1 c. (6 oz.) butterscotch chips

1/2 c. peanut butter

1/2 c. salted peanuts

2 c. chow mein noodles

Place chips, peanut butter, and peanuts in a 2-qt. bowl. Cover with plastic wrap. Microwave at medium (50 percent) 3-5 minutes until most of chips are shiny or soft. Blend well; stir in chow mein noodles with rub- / ber spatula. Drop by forkfuls onto waxed paper. Garnish with small piece candied cherry. Yield: 2-1/2 dozen.

Apple Chutney

For a gift idea, Liz Tole shared a recipe for Apple Chutney which was delicious, and I made a recipe of Crock Cheese which also tasted good and would be great to pack in small containers and give for gifts.

4 c. chunky applesauce

1 c. chopped dried peaches (drained)

1 c. sugar

2 T. lemon

1 20 oz. can crushed pineapple juice

3/4 c. raisins

Combine all ingredients in 3 qt. casserole. Cover with wax paper. Microwave at high for 20 to 25 minutes, stirring well several times. Spoon into hot sterilized jars and seal. Yields 7 to 8 six ounce jars. Serve with pork, beef, or poultry.

Crock Cheese

1 lb. Cheddar, Colby or Monterey Jack cheese

1/2 cup butter or margarine
