Are you looking for a new “hearthealthy” dessert to make for your loved ones for Valentine’s Day? Well, low-cholesterol desserts are now yours with some simple recipe adjustments and a little imagination. And what better time than February - Heart Month - to try them.

Many desserts made with whole eggs can be made by using egg whites or frozen egg substitutes. Either alternative works well in the following recipes.

But egg substitutes can’t be used in every recipe. For example, souffles, meringues, and mousses need beaten egg whites for higher volume. Some manufacturers do not recommend egg substitutes for recipes calling for more than four eggs or for use with packaged mixes, so read the label to be sure.

You can also replace dairy products with low-cholesterol ingreidents. Margarine is a good substitute for butter in most cases and low-fat yogurt can be used in place of sour cream.

And finally, don’t feel guilty for serving fresh fruit or a small scoop of frozen yogurt or sherbet with fruit on top for dessert. You can dress it up by serving it in a stemmed sherbet dish or layering in a parfait glass or adding a teaspoon of liqueur to flavor the fruit.

If your loved one needs to cut back on fat/cholesterol/calories, you’re actually doing him/her a favor by not making the rich, gooey desserts to tempt them. If you pack a lunch, dried fruit and/or raisins are a good choice for dessert or a snack. They’re higher in calories than fresh fruit, but they’re loaded with vitamins and they travel well.

The following recipes for Pound Cake and Black Forest Bars turned out well. Note that the Black Forest Bars have a meringue dollop on top in place of a whipped cream topping.

Pound cake

Vegetable cooking spray

2 1/2 cups plus 1 teaspoon sifted cake flour, divided

2/3 cup sugar

1/2 cup margarine, softened

3 egg whites or 1/2 cup frozen egg substitute, thawed

1 tablespoon vanilla extract

1 teaspoon almond extract

3/4 teaspoon baking soda

1/4 teaspoon salt *

1 (8-pounce) carton low-fat vanilla yogurt

Coat bottom and sides of an 8 1/2x 4 1/2- x 3-inch loafpan with cooking spray; dust with 1 teaspoon flour, and set aside.
