with the baking soda and add to the batter alternately with the buttermilk, beginning and ending with the flour mixture.
Pour into a 9 x 9-inch oiled and floured square cake pan. Bake at 350 degrees F. for 30 to 40 minutes. Yields: 12 servings.
Frosting:
1/2 cup soft margarine
2 cups confectioners’ sugar
2 tablespoons sherry
Cream together the margarine, confectioners’ sugar and sherry until fluffy. Use to frost cooled cake.
This recipe for Williamsburg Orange-Wine Cake is from the Heart Association Cookbook. The icing almost doubles the calories, so I’d garnish it with a dusting of confectioners’ sugar and a twist of orange rind. Also, note how small the serving is - 12 servings from a 9 inch square cake. This is another point to remember for helping people to eat wisely - give small servings, eat slowly and savor every bite. And no second helpings! We can and should enjoy a variety of foods - even desserts - when eaten in moderation.
