2 tsp. freshly cracked black pepper

2 tbsp. yeast

4 1/2 to 5 cups flour

1 cup tepid water

1 cup grated sharp cheddar cheese

Add to the scalded milk the sugar, salt and pepper. Set aside to cool. Pour the water into a large bowl and sprinkle the yeast over it. Let stand five minutes or until bubbly. Add to it the milk mixture and the cheese. Stir well. Add the flour, one cup at a time, stirring well after each addition. When enough flour has been added so that the dough is not too sticky, scoop out onto the kneading surface and knead until smooth and elastic. Transfer dough to a lightly oiled bowl and cover with a floured towel. Set aside to rise until doubled.

Punch down dough, knead for a minute and cut in half. Form each half ynto a loaf and place in a buttered loaf pan. Let rise until about double. Bake at 350 degrees for 30 minutes, or until done.

Quick and Easy Pizza Dough

1 1/4 cups tepid water

2 tbsp. yeast

1 tsp. sugar

3 1/2 cups flour (a mix of 2 1/2 cups white and 1 cup whole wheat is good)

1 tsp. salt

1 tbsp. olive oil

Pour the water and sugar into a large bowl and sprinkle yeast over it. Let sit until bubbly, and add the oil and salt. Stir well. Add the flour, one cup at a time, until a dough forms. Turn out onto the kneading surface and knead until smooth and elastic. Transfer to a lightly oiled bowl, cover with a floured towel and let rise until doubled. (This is a very lively dough and rises quickly.)

Punch down dough, and immediately spread out on a round or rectangular pizza pan that has been sprinkled first with commeal. Add pizza ingredients to top, beginning with the tomato sauce, toppings, and ending with the cheese.

Bake at 500 degrees for 10 to 15 minutes.
