Whole Wheat Pita
5-6 cups whole wheat or all-pur* pose flour (or a combination of berth) • 1 package yeast
1 1/2 teaspoons of salt
1 1/2 teaspoons of sugar
2 1/2 cups warm water
2 tablespoons oil
In a large mixer bowl, combine 3 cups flour, yeast, sugar and salt; mix well. Add warm (120-130 degree F) water and oil. Blend at low speed until moistened; beat 3 minutes at medium speed. By hand, gradually stir in enough remaining flour to make a firm dough. Knead on floured surface until smooth and elastic, about 10 minutes. Let rest 20 minutes.
Punch down and divide into 4 pieces. Divide each quarter into 6 pieces. Shape each piece into a smooth ball. On a lightly floured surface, roll each ball into a S-inch circle. Cover, let rise 30 minutes. Place 6 circles on a large cooling rack, then place the cooling rack on oven rack. Bake at 500 degree F for 5 minutes until puffed and tops just begin to brown. Remove from rack; cool. Cut circles in half and All. Make 24 pitas.

3 whole wheat (6-inch) pita pocket breads
1 cup sliced, fresh mushrooms
1 medium zucchini, shredded (about 1 1/2 cups)
2 green onions, sliced
1/2 cup sweet red pepper strips
3/4 cup shredded low-fat mozzarella or Monterey Jack cheese
Cut each pita bread in half; open each half to form a pocket Combine mushrooms, zucchini, onions and red pepper. Microwave on high, uncovered, 3 minutes or until just tender, stirring once. Drain. Stir in cheese. Divide filling among breads. Place on paper towel-lined platter; cover with paper toweling. Microwave on high 2 to 3 minutes or until filling is heated and cheese starts to melt; rotating dish once. Makes 6 sandwiches.
