Eggs are the perfect choice as a portable food. Just remember to be conscious about food safety. When preparing the meal, wash your hands not only before handling food, but also between steps. Be sure to wash cutting boards, knives, and other utensils with hot, soapy water after any contact with raw meats, eggs, fish, and poultry.

For an easy lunch, why not mix up your favorite egg salad at home. Then at the picnic site, build terrific sandwiches on foccacia bread by layering the egg salad with slices of prosciutto and eggs, blue cheese, tomatoes, and cooked bacon bits. Bring along vinaigrette salad dressing, cracked black pepper, and croutons. And don’t forget pickled eggs, easy-to-make, easy-to-pack, easy-to-eat.

If you’re planning to cook outside, nothing is faster than eggs. You can have a great, inexpensive meal served up in no time. Omelets and frittatas are terrific one-pan meals. They require minimal planning and cooking time and are a cinch to clean up.

Why not treat yourself to something a little different, a fruit omelet. When the eggs are cooked, dot Neufchatel cheese on one side. Sprinkle with brown sugar and berries, and then fold omelet in half. What could be more refreshing on a warm, summer day!
