Between the complicated equipment and the growing plants. Wit and Dorothy don’t have a minute of free time. "I spent the night here last week,” Wit confessed. “I came down to check at II and just as I was turning off the light. I saw a leak." He couldn't find the hole where the nutrient-water mix was escaping from the tomato beds so he curled up and went to sleep in the greenhouse, awakening every hour to make sure the water levels were high enough.
"It stopped the next day." he said. “But 1 never did find the hole. I still don't know where it came from."
Besides attending to these little emergencies. Dorothy and Wit spend seven days a week working in the greenhouses. "The two of us put in from eight to 16 hours a day,” Wit reported, adding that they also employed two women on a part-time basis.
