orange extract
1 tablespoon grated lemon rind or orange rind
1/4 cup chopped nuts ,,
1/4 cup raisins or chopped dates
1. Preheat the oven to 400 degree F.
2. In a large bowl, combine the oat bran, baking powder, and salt (if desired).
3. In a medium-sized bowl, combine the oil, honey, milk, egg whites, and whole egg. Beat the mixture until it is frothy. Stir in the desired extract and grated rind (see “Preparation tips,” above).
4. Add the milk mixture to the bran mixture, and beat the ingredients with an electric mixer at medium speed for two minutes to allow the batter to thicken. Fold in the nuts and raisins or dates. Distribute the batter among 12 muffin cups fitted with greased paper liners.
5. Place the muffin tin in the hot oven, and bake the muffins for 15 to 17 minutes or until a tester inserted into the center of the muffins comes out moist but not wet. Turn the muffins out onto a rack to cool. When they are cool, store then in the refrigerator or freezer.
