Combine eggs and mext 3 ingredients; add to flour mixture, stirring just until moistened. Sir in mincement and pecans. Spoon batter into 3 greased 8 1/2 x 4 1/2 x 3-inch loafpans.

Bake at 350 for 1 hour or until a wooden pick inserted in center comes out clean. Cool in pans or wire racks 10 minutes; remove from pan, and let cool on wire racks. Yield: 3 loaves. Mincemeat Ginger Drops 1 package (14.5 ounces) gingerbread mix 1/2 cup water 1 cup mincemeat 1/2 cup chopped nuts Heat oven to 375 degrees. Mix gingerbread mix and water. Stir in candied fruit and nuts. Drop by teaspoonfulls onto lightly greased cookie sheet. Bake 10 to 12 minutes. About 3 dozen cookies. Mincemeat Tarts 1 An old English treat, adapted to/ Virginia tastes. 1 pound prepared mincemeat 1/4 cup brandy 1 finely chopped tart cooking apple i Pastry for 9 inch double pie crust Mix prepared mincemeat with brandy, let steep at least 48 hours. Add chopped apple. Chill pastry and roll out. Cut into 3 inch circles, place a spoonful of mincemeat a spoonful of mincemeat. Fold over, crimp edges; and prick top. Place on cookie sheet and bake at 450 for 15 minutes. Cool slightly and remove to rack with spatual. Makes 12 to 18. j
