Burdick continued. “No one can want for anything in here.”

The cafe has espresso and cappuccino machines, and there is a catering element to the business.

“We cater lunches to Highland School,” Burdick explained. “It’s the eighth year we’ve been doing this, and I’m sure that the children are seeing a difference in the quality of the food because of the chefs.”

Most menu items run $5 or less. The salad bar costs 20 cents an ounce, while something like a cheese omelet goes for $1.85.

The Night Owl Cafe is open from 8 p.m. to 7 a.m., providing sandwiches, soup, burgers and the like, as well as breakfast items.

“The Night Owl Cafe is basically a mini-bistro,” Burdick said. “We have a grill, and we can prepare fried chicken, cheese steak subs, burgers and subs. The full-scale bistro breakfast opens at 7 a.m. Families bringing members in for early surgery can come in here and eat.”
