Freezing Sweet Ckerrie*
If you plan to preserve sweet cherries by freezing, choose firm fleshed varieties, advises Frank A. Lee, of the New York State Experiment Station. Dr. Lee’s test with this fruit shows that soft fleshed sweet cherries are likely to be soggy after freezing, but those with firm flesh make an attractive frozen product.
Of the varieties grown in New york State, Dr. Lee reports as best for freezing: Schmidt, Lambert and Bing. He rates Victor and Napoleon (Royal Ann) as “Quite Satisfactory.’’
Sweet cherries are less trouble to process than many other fruits, says Dr. Lee. They are stemmed and washed, drained, put into cartons, and covered with syrup of the desired sugar strength. Some people like a syrup made of equal parts sugar and water but others prefer a less sweet syrup for this sweet fruit.
