By Roy E. Moser, Jr., Fruit and Vegetable Processing Specialist - Spring is here at last, and many Of us are spending our evenings out in the backyard in the garden. We’re all just a little tired of the canned foods we have been eating during the winter, and as we plant the seeds, we can almost taste that first mess of peas. Those garden fresh vegetables are really g9©d.
But the season when we can have most of our vegetables available in a garden fresh state is fairly short. Summer goes by rapidly, and the fresh peas and other garden \egetables are gone. But there is no reason why we can’t have a mess of peas just like they came from the garden any time during the year.
Our grandparents and parents could not do that. They had to eat their fresh fpftds when they were in season. Of course, they canned a lot of them, with pretty good results too, but; ,the canned foods did not taste quite like the fresh ones. Those canned vegetables did play an important part in our diet, and they still do. They have done a lot to increase the general health of all of us by making good, nutritious foods available to us throughout the year, and they will continue to play a big part in our diet fqr years to come.
