Microwave Cooking: A Home Economist from Litton will demonstrate microwave cooking, Wednesday, April 11, 7:30 p.m. at Greystone Appliances, Banco, six miles north of Madison on Rt. 231. Eat a light dinner since the menu can be sampled. Class is free and limited to 15. Please call the Extension Office to register. Cooking Vegetables in milk according to Adelle Davis in “Let’s Cook It Right” results in the nutrients dissolving less. If the vegetable is thoroughly stirred with the milk, protein coats the surface and neutralizes the acids or alkalis which cause discoloration, thus the color is preserved and often intensified. Be sure to use a simmering temperature so milk does not boil over, scorch or curdle. The milk can be saved and used again or made into cream soup.
