If you have a wood stove and are adventurous, try Mrs. Diana Bird’s recipe for smoke turkey. It’s delicious sliced thin and served on homemade rolls with homemade mayonnaise.

Get a good bed of coals in your wood stove. Put hickory chips that have soaked in water for 15 minutes on coals. Place rocks on each side of coals to hold grate. Place an 11 pound turkey in a roasting pan with 1 to 2 cups water and place on grate in wood stove. Do not cover pan. Cook one hour. Add more hickory chips. Cook another hour. Remove from wood stove and cook in a 150 to 200 degree oven for four hours. Add water, if necessary to keep turkey moist.
Serve sliced thin on rolls with mayonnaise.
