Tugging and lifting, the men hoisted the carcass onto a board and with chains, slid it down a ramp from the hog pen to the scalding tub. Waves splashed up with the steam as hundreds of pounds of meat hit the hot water. After a few minutes in the scalding bath, the carcass was raised again with chains onto a plywood table where the men, like so many barbers, went to work scraping the hair from the hide.
Once hairless, the hog was carried to a tripod where it was hung by its hind legs, upside down, ready to be opened.
