Barbara is also known locally as a good cook and has spent some time experimenting with recipes that omit sugar. One of these is her Peach Batter which she cans in quantity every year.

“1 process all my jams and jellies for a few minutes,” she said. “I’m just one of those people that doesn’t like to take a chance on spoilage or bad seals.”

Peach Batter

Use fully ripe peaches, cutup. Cook with a little water until they are soft enough to put through a strainer. Cook, stirring constantly, until they reach the proper thickness. Fill sterilized jars and process in boiling water bath for ten minutes. Sometimes Barbara adds a few gratings of nutmeg for flavor before canning.
