and molasses keep well. Those that are cakey and delicate dry out or go limp faster. If you must freeze special cookies to keep them, heat..them for a minute when thawed in a 300 degree oven. To soften dry. hard cookies, put them with a piece of bread or apple in an air tight container.

Lebkuchen are to hang on the tree, but they'll keep long enough to provide many snacks after their decorating is through. This recipe makes about 4 dozen 4-inch cookies:

l'/j cups unsalted sweet butter, softened

'/i cup packed light brown sugar

2 tablespoons ground ginger 2 teaspoons ground cinnamon

2 teaspoons grated lemon peel

1 teaspoon grated orange peel l'/i cups light molasses two-thirds cup honey

3 eggs, beaten

6 to 6Vi cups all-purpose flour

2 teaspoons baking soda

Vi teaspoon salt Whole blanched almonds

Red and green candied cheeries, cut In half

1 egg white, lightly beaten 1 Cookie Glaze (recipe follows)

1. Cream butter and sugar in large mix^r bowl; beat in ginger, cinnamon and lemon and ortnge petls. Heat molasses and honey in small saucepan to boiling. Cool 10 minutes. Stir into butter mixture; bat in eggs. Sift 4 cups of the flour, the baking soda and salt together. Stir into batter. Stir in as much of the remaining flour as needed to form a soft dough. Shape dough into ball; wrap in plastic wrap. Refrigerate until cold, about 2 hours or overnight.

2 Heat oven to 350 degrees. Roll dough on lightly floured surface 'A inch thick. Cut out cookies with 4-inch cutters of desired shapes. Transfer to greased baking sheets. Press almonds and cherries lightly into dough. Brush tops of cookies with egg white. Bake until centers are firm to the touch. 12 to 15 minutes. Cool on baking sheets on wire racks 10 minutes.

3. While cookies are baking, make Cookie Glaze. Brush generously over warm cookies. Cook cookies completely.

Cookie Glaze

Makes about V« cup

1 cup sugar

1 tablespoon light corn syrap

1 tablespoon water

Heat ingredients in small saucepan, stirring constantly, until sugar dissolves and mixture boils; reduce heat. Simmer covered 5 minutes. Cool 10 minutes.
