Rappahannock Newt, uses a well-worn and spattered copy of her favorite picture cookbook for her cookie recipes. Here are two of the recipes she likes best. Snickerdoodles Mix together thoroughly— 1 cup soft shortening l'/j cups sugar 2 eggs Sift together and stir in... 2V4 cups sifted flour 2 tsps. cream of tartar 1 tsp. soda Vi tsp. salt Chill dough. Roll into balls the size of walnuts. Roll in mixture of 2 tbsp. sugar and 2 tsp. cinnamon. Place about 2” apart on ungreased baking sheet. Bake until lightly browned..but still soft. (These cookies puff up at first...then flatten out with crinkled tops.) Temp: 400 degrees. Time: 8-10 minutes. Yield: 5 doz. 2" cookies. Molasses Crinkles Mix together thoroughly: */« cup soft shortening 1 cup brown sugar 1 «U '/«cup molasses Sift together and stir in: 2Vi cups sifted flour 2 tsp. soda Vi tsp. salt Vi tsp. cloves 1 tsp. cinnamon 1 tsp. ginger Chill dough. Roll into balls the size of large walnuts. Dip top in sugar. Place, sugaredside-up. 3*’ apart on greased baking sheet. Sprinkle each cookie with 2 or 3 drops , of water to produce a crackled surface. Bake just until set but not hard. Barbara Burke, who also works for the News, makes Carrot Cookies and frosts them with Orange Butter Icing. Carrot Cookies 1 cup shortening (part soft butter) Vi cup sugar 2*gg» 1 cup mashed cooked carrots 2 cups flour (all-purpose) 2 teaspoons baking powder Vi teaspoon salt '/« cup shredded coconut Heat oven to 400 degrees. Mix shortening, sugar, eggs and carrots. Blend in flour, baking powder and salt. Stir in coconut. Drop dough by teaspoonfuls about 2 inches apart onto lightly greased baking sheet. Bake 8 to 10 minutes or until no imprint remains when touched lightly. Immediately remove from baking sheet. Cool. Frost with Orange Butter Icing. Yield: 4 dozen. Orange Butter Icing 3 Tablespoons soft butter or margarine i'/i cups confectioners’ sugar 2 teaspoons grated orange peel 1 Tablespoon orange juice Blend butter and sugar. Stir in orange peel and juice. Beat until frosting is smooth and of spreading consistency.
