Most consumers will agree hands down that round red tomatoes grown in real field dirt far surpass tomatoes grown by other means. Not only is the taste better, but the texture is soft, juicy and succulent. When cooked, red tomatoes make an excellent smooth, thick sauce for use over vegetables, meat and pasta.

When buying tomatoes, look for those that are well-shaped and firm for their size. Ripe tomatoes will be slightly soft and deep red in color. Reject tomatoes that have green or yellow patches or deep growth cracks. Avoid buying tomatoes with bruises, mold, blemishes and other surface damage. One true sign of freshness is the smell. Vine-ripened tomatoes will have a clean, fresh, tomato smell.

When preparing tomatoes for serving, remember that cutting them vertically rather than horizontally will lessen drips and leaks. Also wedges make neater, drier salads than slices do.

Seasonings which enhance the flavor of tomatoes include basil, oregano, thyme, parsley and chives. They are also very tasty when marinated in an olive oil-based vinaigrette.
