With the holidays behind and a jong winter still ahead before the first spring bulb pokes timidly from the garden, fruit remains one of the foods that reminds us that somewhere the sun still shines. Winter Pears, available nearly all year around, can easily put the sunshine back into winter meals. Properly ripened, pears provide the sweetness and juice that only fresh fruit can offer. Summer or Winter salads are both versatile and healthy. Curried Pears and Rice Salad with a hint of far east flavors is tantalizing and can be made ahead. Curried Pears and Rice Salad (Makes about 6 servings) Water 1 can (12-1/2 oz.) beef broth 1 cup rice 2 fresh USA Anjou, Bose or Comice Pears . 1 cup thinly sliced celery 1/2 cup mayonnaise 3 tablespoons lemon or lime juice 1/2-3/4 teaspoon curry powder 1/2 teaspoon crushed thyme lettuce
