a bargain. So now's a good time to try your hand at freezing your own French Fries. Food specialists in the U. S. Department of Agriculture say French fried potatoes are best when prepared in two stages. Here's how you can do it. . with the freezing operation between the two stages. Cover the bottom of a fry basket with raw potato strips and fry them until they are tender but not brown. This should take about 4 minutes in fat that is 360 degrees F. When the strips cool to room temperature, package them forifreezing in meal-size portions and store at 10 degree F. They'll maintain their quality for three or four months. When ready to use the French fries, simply thaw and finish them in 375 degrees F. fat. Cook until golden brown. Or, you can cook them unthawed in 500 degree F. oven. French fried potatoes finished in the oven are less oily, but they are also slightly less tender than those browned in fat. ,
