"Saturday is my experimental night,” Samson said. This is when he tries out more exotic international food as the daily special. ‘‘People let me know if it goes over and then I fix it again...So far, people are liking it,” he said.
“Right now, the demand is for Mexicali chicken. My customers want it on Saturday, they want it on Sunday, they want it all the time!”
Nestor Samson is uniquely qualified in international cuisine. His career in the U. S. Army took him all around the world, as manager of military clubs and restaurants from Southeast Asia to Europe.
Samson’s choice of occupations, like his restaurant here in Rappahannock, was the result of chance. He was born in the Phillipines and came to the U. S. to study architectural engineering at a California university.
Samson explained that he had the option of becoming either a citizen of the United States or a citizen of the Republic of the Philippines. He had always planned on returning to the Philippines after he finished his education and anticipated retaining his citizenship there. "But when I arrived
